A very juicy orange cake with gorgeous citrus flavour. Delicious ice cold, just keep in the fridge!
210g caster sugar
4 tablespoons buttermilk
250g plain flour
1 Organic Orange
1½ teaspoons baking powder
¼ teaspoon bicarbonate of soda
1 pinch of salt
Preheat the oven to 180 C / Gas
Grease à loaf
Grate the zest of the orange
Process the sugar with the orange zest in a food processor
Mix the orange sugar with the buttermilk, and then the eggs one by one. Finally, stir in the orange olive oil.
Mix flour, baking powder, bicarb and salt. Mix well with the wet ingredients.
Pour batter into prepared loaf tin and place into the preheated oven and bake for 55 minutes. Check it is cooker with a skewer. Cool on wire cake rack.
