This Lively Citrus Summer Coleslaw is a refreshing and flavourful side dish that features a combination of shredded cabbage, carrots and other seasonal vegetables tossed in a tangy citrus dressing. 500g shredded green cabbage
250g thinly julienned carrots
50g thinly sliced red onion
50g chopped fresh parsley (or mint or coriander)
75ml Casa de l'Oli Lime Olive Oil
3 tablespoons fresh lemon juice
1 tablespoon Horseradish sauce sea salt and black pepper, to taste
Combine cabbage, carrots, onion, and herbs in a large bowl; toss gently.
Whisk together remaining ingredients in a separate small bowl. Pour over cabbage mixture; toss well to coat.
Serve immediately or chill for several hours for flavours to fully develop.
