Simple, mouthwatering, slightly smoky-sweet, This easy recipe takes blog corn to the next level, fit for any summer buffet.

 

Ingredients

4 ears sweetcorn, cleaned & halved

2 tbsp unsalted butter

1/2 of a finely chopped chilli pepper four favourite kind or green pepper pinch of sea salt few sprigs coriander, chopped 2 tbsp Casa de l'Oli Lime Olive Oil

2 tbsp Feta cheese (optional)

 

Directions

Heat a frying pan over med-high heat.

Cook sweetcorn halves for 2 minutes on each side, or until light charring develops.

Meanwhile, melt the butter in a small saucepan.

Add the chopped chilli pepper, salt, coriander and Lime Olive Oil and and remove from heat.

Drizzle butter-oil mixture over pan-roasted corn pieces.

Garnish with crumbled feta cheese if desired!
